balanced eating: avotoast

Alright guys!

Listen up. I wasn't the biggest fan of avocado toast or "avotoast" as many like to call it.

It just never tasted that great to me, it just always felt like it was missing something.

UNTIL....

I started eating this version of avotoast.

It's the holy grail of lunches.

Seriously, someone get ahold of Indiana Jones. He'd be impressed.

This is a go-to lunch for me and my husband.

It's just so incredibly easy to make and requires little to no cooking which is SO nice on these hot summer days.

Here's what you need:

  • 3 hard boiled eggs

  • I get lazy about making these when I prep, so I end up buying them from the store. It's just so much more convenient. & I don't have to deal with a hot stove during the summer heat.

  • 1/2 of an avocado

  • Red Onion

  • Celery

  • Dijon mustard

  • Garlic Salt

  • Pepper

  • Smoked Paprika

The ingredients above are a list of my favorite flavor but the seasonings and flavor combinations are endless. I've done lemon juice, chili powder, salt and pepper. Seriously, it's all preference.

How to make:

Toast your bread (duh.)

Mash up the three eggs and 1/2 of an avocado. Add about a tablespoon of Dijon mustard.

Add garlic salt and pepper to taste.

Add as much or as little onion as you'd like

Add as much or as little celery

Top toast with spread.

You will have more than enough for the toast, I always just eat the rest after. This makes one serving. It's a lot, but it's high with good fats, low-medium carb (depends on bread selection).

Enjoy it with some grapes and any other fruit you'd like!
